Larger (souzhong) leaves are taken from the lower parts of the tea bush and after fermentation \nthey are roasted on a hot iron plate. The tea is then smoked on bamboo racks over a fire made of \ngreen pine logs rich in resin. Souchongs can be smoked to different degrees, and this is a \nmoderately smoked example. Souchong is a classic tea with a dedicated following.
